Would this work with hot air and cold liquid? I assume the condensation might plug up the hot air side?

Hello, if the temperature of the hot air is lower than 100 degrees after heat exchange, it will condense into water. Pay attention to the pipe in from the top of the plate exchanger and the pipe out from the bottom, so that the condensed water can be discharged and will not block the inner channel.

For a 60 plate, I was expecting more from it. You need two pumps and the water needs to be iced. The pump for the wort should be a pump specifically for wort and able to push quickly through exchanger to cycle quicker.
