Bought this for our backyard maple syrup production. I have 12 taps this year here in Vermont. Hope to make 3 to 4 gallons of syrup. We use the pan on a Camp Chef double 30000 btu burner propane stove. With 2 inches of sap it heats quickly and evaporates about 2 1/2 gallons of sap per hour. The preheater is helpful to add sap without killing the boil and when things are running well you can crack the preheater valve and keep the boil going nicely. Some inner pan divisions would be nice for drawing off finished or close up syrup but I use the pan to concentrate the syrup enough to finish the batch on the kitchen stove. I think the pan would evaporate sap at a quicker pace and heat a bit more evenly than my 2 burner propane stove if I sat it on a cinder block or barrel wood stove. Maybe next year. All in all I think you'll like this pan, the price is fair, no leaks from the welds. The face of the fittings for the valves bottom out before you can get them tight so you need some extra teflon tape to prevent/reduce leaks. The valves and thermometer that come with the pan do not leak and seem to be of reasonable quality. The thermometer reads in Celsius - it is helpful but I don't use it to determine when it is time to draw off for finishing.
