Used it 1 time this year. Cooking down on a fire was a bit tricky but manageable. My pet peeve is that the thermometer is in the wrong place and is useless where it is placed. As for the bottom drain it is also about useless. Had to move the tank around just to drain because the straight handle moves in the wrong direction to allow you to open the drain.

I was a bit skeptical but decided to give this pan a chance. Worked well! Nice and deep and cleaned up pretty well. I bought 2! If it came with handles I would have rated 5 star.

Love this evap pan
Made my life cooking down sap for maple syrup a ton easier. Really reduces my cooking time. Surface area is key. Makes evaooration much faster. I cook on an outdoor wood burner, cleaning the soot off tgis stainless steal pan is surprisingly easy. If you're just starting out making syrup, this is the pan to get.

Some dents and dings. However, there was no visible damage to the packaging, indicating the product was damaged prior to packaging. At one time it appears there was shipping plastic on both pans that was removed, which leads me to believe the pan was previously used. Other than the residual plastic that was nearly impossible to remove under the flange of both pans, the pan operated as designed for my individual use. Would recommend.

backyard maple syrup boiler
Bought this for our backyard maple syrup production. I have 12 taps this year here in Vermont. Hope to make 3 to 4 gallons of syrup. We use the pan on a Camp Chef double 30000 btu burner propane stove. With 2 inches of sap it heats quickly and evaporates about 2 1/2 gallons of sap per hour. The preheater is helpful to add sap without killing the boil and when things are running well you can crack the preheater valve and keep the boil going nicely. Some inner pan divisions would be nice for drawing off finished or close up syrup but I use the pan to concentrate the syrup enough to finish the batch on the kitchen stove. I think the pan would evaporate sap at a quicker pace and heat a bit more evenly than my 2 burner propane stove if I sat it on a cinder block or barrel wood stove. Maybe next year. All in all I think you'll like this pan, the price is fair, no leaks from the welds. The face of the fittings for the valves bottom out before you can get them tight so you need some extra teflon tape to prevent/reduce leaks. The valves and thermometer that come with the pan do not leak and seem to be of reasonable quality. The thermometer reads in Celsius - it is helpful but I don't use it to determine when it is time to draw off for finishing.
