We cook a lot of brisket here in Texas. When you buy them, they have a thick layer of fat. Ideally, you only want to leave a quarter of an inch of fat. It's hard to hand cut. This thing just peels it right off and you can leave a very pretty looking layer of fat. Works fantastic.
it functions well for the price, but you will probably need to replace it every 6 months.
I have an issue with one of them, the cable starts giving me a problem.
