Important!!! Season properly for best pan ever. Watch several videos and don't cut corners. I repeated several applications of grapeseed oil on gas burner temperatures reached high 600's. Use less oil than you think you'll need!!! Heat until smoking completely stops. Check by viewing from side. Let pan cool and wipe down. Smoother than any pan. This pan IMHO is the perfect compromise between cast iron and pans. Cleans easily by a wipe with a paper towel. If anything does stick, I clean with a little oil and coarse salt. Then wipe out and your good to go. It is still a bit heavy to " flip" items, but can be done. I also recommend getting a silicon grip both because handle can get hot and it makes the handle more comfortable in one's hand.
